1. Spray large skillet with cooking spray. Add chicken; cook and stir on medium-high heat 2 min. or until no longer pink.
2. Stir in water. Bring to boil. Add rice. Reduce heat to low; cover. Cook 10 min.
3. Add all remaining ingredients except onions; mix well. Cook until cheese is completely melted, stirring occasionally. Sprinkle with onions.
